  • • Potato - 1.2 kg;

  • • Parmesan - 90 g;

  • • Nutmeg - 1 pinch;

  • • Egg - 1 pc;

  • • Egg yolk - 4 pcs;

  • • Rapeseed oil - 4 tablespoons;

  • • Butter - 70 g;

  • • Leek - 4 pcs.
  • For the sauce:

  • • Butter - 75 g;

  • • Kenyan pepper - 1 pinch;

  • • Sea salt - 2 pinches;

  • • Lemon juice - 60 ml;

Preheat the oven to 180-200 degrees. Put potatoes on a baking sheet and bake for 75 minutes. Leave to cool slightly, after dividing each tuber into two parts and cut recesses into them. Mash the cut core in mashed potatoes and pass through a sieve.

Mix in one bowl flour, parmesan, most of chopped green onions (the rest will go to garnish), nutmeg, whole egg, egg yolks and spices to taste, then knead on a flat surface sprinkled with flour, you should get a mass that looks like dough.

Divide the dough into four parts, and then each by hand roll into a sausage. Cut the sausage into 17 equal parts, crush each barrel with a fork and form a traditional recess in it. Dumplings freely put on parchment paper, cover and put in the cold for a while.

In a non-stick pan, fry (with oil) the leek rings. Fry over high heat for about 8 minutes until the onion is charred.

To prepare the sauce, pour the cream into a large saucepan and simmer at medium temperature for 12 minutes. At the same time, bring a large pot of water to a boil. After boiling, immerse chilled dumplings in water.

After the dumplings come up, take them out of the water. After cooking, put the dumplings with a slotted spoon on a greased baking sheet.

Beat butter slowly in cream. Then add a little cayenne pepper, sea salt and lemon juice. Let the cream stand a little.

Now you need to fry the dumplings in a pan with the addition of a small amount of oil. Add 1 tablespoon of vegetable oil and a third of butter to the dishes, and then put dumplings on the fire, cook until a pleasant golden crust forms.

Place the dumplings in a deep bowl with charred leek with a spoonful of sauce. The dish can be served with garlic cloves.
