- 270 ml of milk with a fat content of at least 2.5%;

- a pinch of salt;

- 3 drops of almond essence;

- zest with ½ lemon.

Although initially small, tart and sour cherries of the Griot variety were placed in klafuti, sweet dessert cherries replaced them over time. Culinary experts did not come to a consensus about whether to extract seeds from berries. Someone says that it is terribly inconvenient to spit them all the time, while others believe that it is the bones that give the baked cherry the necessary taste and aroma. Whichever side you take, the stems from the cherries will have to be removed. Then put the fruits in a bowl and slightly press down. It is necessary to press so that juice stands out inside the cherry, the skin bursts slightly, but the fruits still retain their shape. Pour brandy into the crushed cherry, sprinkle with two tablespoons of powdered sugar, mix and cover with a lid or plastic wrap. Leave for 2 hours.

Preheat the oven to 180 ° C. Lubricate a 25 centimeter baking dish and lay the cherry in one layer. It is best to use a form with thick walls - porcelain or cast iron, glass is also suitable. Sprinkle the berries with half sugar and shake the shape so that the grains cover the cherries on all sides.

Sift flour into a bowl with salt and the remaining powdered sugar. Melt the butter, and beat the eggs. Mix the sifted flour with eggs, milk and butter, and remove the moist, smooth dough.
