Sweet and sour sauce is perfect for beef. It gives the meat an original flavor and improves the absorption of dishes. Fruits, juices, berries are used as an acid base for the sauce, and sugar, jam and even honey are used as a sweetener. Sweet and sour sweet sauce is recommended for fried or baked beef.

Products:

- apple - 1 pc;

- onion - 1 pc;

- curry - 1 tbsp;

- flour - 2 tbsp;

Peel the onion, cut it into small small cubes. Remove the peel from the apple, cut, remove the core. Cut it into cubes. Heat a frying pan with vegetable oil, put onions, apples and sauté until soft (over low heat). Pour in flour, stir, cook another 2 minutes. Then add tomato puree, pepper, salt, lemon juice. Stir, simmer for 15 minutes without boiling. Remove the finished sauce from the stove and cool a little.

For beef, grilled, cherry sweet and sour sauce is suitable.

- cherry (seedless) - 400 g;

- sugar - 100 g;

- onion - 2 pcs.;

- lemon juice - 3 tbsp;

- butter - 1 tbsp;

- pepper, salt - to taste.

For sweet and sour sauce, both fresh and frozen cherries are used. Rinse the fresh berries, dry them, and then remove the seeds. Frozen cherries must first be thawed and drained. Grind the berries with a blender, add sugar and mix everything. Peel the onion, chop it finely, lightly fry in a small amount of oil. Add berry puree, lemon juice, salt, black pepper. Stir the mixture thoroughly, bring it to a boil over low heat, cook for 5 minutes. Chill the prepared sauce.

To make the cherry sauce thicker, pour the starch, diluted in a small amount of water (at the rate of 10 g per 100 g of berry puree) into the hot mixture.

Beef dishes include sweet and sour sauce with pineapple.

Products:

- pulp of fresh pineapples - 300 g;

- brown (cane) sugar - 3 tbsp;

- apple cider vinegar - 3 ml;

- Tabasco sauce - 3 g;

- black pepper, salt - to taste.

Grate 200 g of pineapple pulp on a fine grater. Pour the resulting juice into a separate bowl. Dice the remaining 100 g of pineapple.

Heat the juice in a frying pan, add sugar and stir until dissolved. Put the pineapple, grated and diced, Tabasco sauce, mix, hold on fire for 5 minutes. Add salt, vinegar, pepper, bring to a boil. The sauce is ready.

Sweet and sour pineapple sauce can also be served with turkey and pork dishes.

For boiled beef, tongue, prepare redcurrant sauce.

- onion (small) - 1 pc.;

- butter - 25 g;

- sugar - 1 tbsp;

- cherry leaves - 2 pcs.;

- mint - 1 branch;

- pepper - 3-4 peas;

- cloves - 2 buds;

- salt - to taste.

Pour water into a saucepan, add butter, sugar. When it dissolves, put currants, spices, chopped mint. Cook the mixture over low heat until juice begins to stand out from the currant. Then chop finely the onion and cherry leaves, put in the sauce, salt. The dish will be ready when the onion is soft.
