You will need
- - 350 g lamb tenderloin (cut off excess fat)
- - 2 tbsp. l whiskey or dry sherry
- - 4 tbsp. l soy sauce
- - 1 tbsp. l rice or white wine vinegar
- - 2 tbsp. l finely chopped ginger root
- - 1/2 tbsp. l tomato paste
- - 1 tbsp. l dark or light cane sugar
- - 1 tbsp. l olive oil
- - 1 small red bell pepper sliced in thin strips
- - 4 chopped young onions
- - 8-12 lychees (peel and remove bones)

Slice the meat diagonally into very thin slices and place in a bowl. Pour in an alcoholic drink and 2 tablespoons of soy sauce. Mix thoroughly, cover and set aside.

In a small bowl, mix the remaining soy sauce with vinegar, ginger, tomato paste and sugar. Throw the lamb in a colander.

Warm the butter in a wok or large frying pan, put pepper and onion and fry for 1-2 minutes. Add lamb and fry for another 2-3 minutes until tender.
