Take a fresh carp, clean it, gut it, remove the tail, gills and fins. Rinse under cold water. Be sure to check the freshness of the fish before cooking. To do this, dip it in a pot of cold water. If the fish "drowned" - it is fresh, but if it has surfaced - it is not worth cooking.

Cut the carp into portions. If only fillet will be used for frying, carefully separate it from the bones and remove the skin. Allow the fish to stand for a little so that the glass is excess water or pat it with a paper towel. Combine 4 tablespoons of flour, salt and black pepper (added to taste). Breast each piece of fish and head in flour and place in a pan with preheated vegetable oil.

Fry the carp in a large amount of vegetable oil until golden brown. Put in the oven and bring the fish to readiness. Readiness check by pressing on a piece of carp with a fork or piercing its toothpicks, if clear light juice stands out - the fish is ready to eat. When serving, pour each slice with butter, sprinkle with finely chopped feathers of green onions and chopped dill.

After eating fish dishes, including fried carp, it is not recommended to drink cold water. Aluminum and many other metal pans used for cooking (all but black cast-iron pans) give the fish a not very pleasant gray color and greatly degrade the taste.

Useful advice

If you want to give fried fish a pleasant aroma, add in addition to black ground pepper and salt to flour 0.5 teaspoon of seasoning for fish. In order for the fish to brown well, you need to add 1-2 tablespoons of butter to vegetable oil.
