Pour cold water into a basin or large pot and soak the processed and chopped kidneys in it for four hours (you can leave it overnight by putting a container of water in the refrigerator). Pour the kidneys with fresh water, put on fire, periodically remove the resulting foam and bring the water to a boil. Again, drain the water and rinse the kidneys, set to boil over medium heat for one and a half hours.

Cooked beef kidneys with a sharp knife, cut into small slices and put in a pre-heated pan with 50 grams of melted lard. Fry the kidneys on all sides, occasionally stirring with a wooden spatula.

While the kidneys are fried, prepare onion sauce, which will give the dish a spicy taste and a refined aroma. Peel one large onion and rinse with cold water. Cut in half and place on a baking sheet. Place in a preheated oven and bake until soft. Mash still hot onion in mashed potatoes with a blender.

Melt twenty-five grams of butter in a pan and fry a tablespoon of flour until golden. Add one hundred and fifty milliliters strained meat broth or water, grind the sauce so that there are no lumps. Mix the cooked flour dressing with mashed baked onions and bring to a boil, add salt to taste.

Put the fried kidneys in ceramic or clay pots, add salt, peppercorns and bay leaf. Pour the offal with cooked onion sauce, sprinkle with herbs and cover the pots with lids, put in the oven preheated to two hundred degrees. Simmer over low heat for forty minutes, and fifteen minutes before cooking, add to each pot an average slice of lemon seedless.
