You will need

  • 3 kg of strawberries (you can also use frozen strawberries);

  • 300 ml of apple juice;

  • 8 g agar-agar (powder) or gelatin;

  • 2 tbsp lemon juice;

  • 10 pieces of fresh mint leaves.

Wash strawberries well, separate from the tail. Fold the strawberries in an enameled saucepan and send to a small fire. Pour apple and lemon juice, mix thoroughly. Wash the mint leaves, dry and add to the strawberries. Make the fire stronger and boil with frequent stirring for 35-45 minutes, until all the strawberries are completely broken.

Remove the resulting strawberry mass from the stove, allow to cool, remove the mint leaves, and rub through a fine sieve so that the already prepared strawberry jam is homogeneous. And send it to the stove again.

Dilute agar-agar or gelatin in 1 cup of cool boiled water, then introduce into a strawberry mixture with a thin stream. Mix everything thoroughly, bring the strawberries to a boil, cook for 1-2 minutes and remove from the stove.

We sterilize the jars in advance (10 minutes in the oven at 200 degrees). Hot strawberry jam without cooling, lay out in jars and tightly roll up the lids. We turn the jars with the lids down and wrap them with a blanket, leave them until they cool completely. Strawberry jam is best stored in a cool, dark place.
