When cooking, it is best to use peeled tomatoes, without a thin peel that separates from the pulp during stewing or cooking vegetables, but is not digested in the human digestive tract. To peel the tomatoes, they must first be subjected to heat, microwave or mechanical processing.

Heat treatment

For work, you will need two pots, water, a slotted spoon, tomatoes and a sharp knife. Pour boiling water into one pan and ice water into another. Choose ripe fruits with dense pulp. Make a shallow cut in the bottom of each fruit with a sharp knife, being careful not to immerse the blade in the pulp of a tomato. Put a few tomatoes in boiling water. It is enough to hold soft, ripe fruits in boiling water for 5-10 seconds, vegetables with dense pulp - from 15 seconds to one minute. As soon as the thin peel on the edge of the cruciform incision begins to wrap, take out the fruits with a slotted spoon and transfer them to a pan with ice water until completely cooled. The peel is easily removed from chilled tomatoes if you gently pull on it with the blunt side of the knife. If the skin is not removed, try to heat the fruit again.

Microwave processing

You will need a microwave, flat plate, tomatoes and a sharp knife. This processing method is suitable only for hard fruits, since soft vegetables, after being extracted from the microwave, become even softer and flabby, suitable only for making mashed potatoes. Using a sharp knife, make a cross-shaped incision in the bottom of dense tomatoes, taking care not to damage the pulp of the fruit, but to cut only thin skin. Place the vegetables on a plate at some distance from each other, with cross-shaped incisions up. Choose the most powerful microwave mode and process vegetables for 30-60 seconds, depending on their size and elasticity. Remove the prepared vegetables from the oven and peel off the dull side of the knife.
