The delicate taste and refined aroma of truffles can make even the usual mashed potatoes a gourmet dish. You can add a little flavored oil or the "royal mushrooms" themselves, they will not be needed so much - a teaspoon of truffles is enough for more than one serving of mashed potatoes.

Truffle Butter Puree

Loose potatoes are thoroughly washed, dried, peeled and cut into medium cubes. Cook for about 12-15 minutes in boiling salted water. Drain the water through a colander, then return the potatoes to the pan, put it on the fire, cover and heat for 1-2 minutes to get dry heat. Mash the potatoes with a crush and rub through a sieve or through a special mill for vegetable puree. Never use a food processor for this purpose, as it will make the potatoes sticky.

Gradually add mashed butter, diced into small cubes. Put as much oil as needed to make the smoothie shiny. Heat the milk in a small saucepan, stop at the boiling point, and then pour slowly in while stirring, add salt and a little freshly ground pepper. Mashed potatoes should become soft and velvety. Put truffle oil. Before serving, season with mashed cream.

Black Truffle Puree

Small potatoes rinse well and boil directly in the peel. Allow to cool slightly, peel and mash butter and milk. Grate the black truffle on a fine grater or chop with a chef's knife. Add raw truffle shavings to mashed potatoes and mix thoroughly. Season with salt and pepper. This dish can be made portioned if you cut the finished potatoes in half directly in the peel, remove the middle and make puree with truffle only from it, and then stuff the halves of the potato with the resulting delicacy.

If the mashed potatoes has cooled, it is better not to heat it, but add a slightly beaten chicken egg to it, mix thoroughly and wrap it in a filo dough with a roll. Deep-fry the "cigars" and serve as a snack.

You can add some spicy herbs to the truffle mashed potatoes - parsley, tarragon, marjoram, thyme.
