Wash the potatoes, place them in a pot of water. Put on medium heat. Boil potatoes until cooked.

Wash the rest of the vegetables - eggplant, zucchini, tomatoes. It is better to take vegetables of about the same diameter to make the ratatouille beautiful.

While the potatoes are cooked, cut the eggplant into round slices. Soak the chopped eggplant for at least 15 minutes in salt water in order to remove its natural bitterness.

After that, cut the remaining vegetables - zucchini and tomatoes into round slices as well. Check the potato; if it becomes soft on top, cool it. Then peel and cut into round pieces as well.

Then make the sauce. To do this, use a blender to mix all the ingredients for the sauce - sour cream, herbs, olive oil and salt. Add spices for spiciness. Add 1/2 teaspoon asafoetida Indian spice. She will give the sauce a onion-garlic flavor.

Start laying out the ratatouille. You can put the vegetables in a round shape, for example in a cast-iron pan. A rectangular shape will do. Pour a spoonful of olive oil into the bottom of the mold. Then alternately vertically spread the circles of vegetables - eggplant, zucchini, potatoes, tomato. And so on in a circle.
