You will need

  • 15 pancakes according to any recipe (the main thing is that the pancakes are thin and elastic);

  • 500 g of apples;

  • sugar - to taste (depending on the acid of the apples);

  • 1 tsp cinnamon.
  • For chocolate custard:

  • 500 ml of fresh milk;

  • 4 yolks;

  • 100 g of chocolate;

  • 30 g of sugar.

Cooking cream. Yolks thoroughly mash with sugar. We heat the milk almost to a boil, but do not boil. Watch carefully! Pour the hot milk into the yolks, crushed with sugar, in small portions. We do this very carefully, after each portion of the poured milk, mix thoroughly so that we do not get an omelet. Pour the mixture back into the saucepan and put on a small fire. Cook the mixture until thick, stirring continuously. In no case do not stop stirring the cream, otherwise it may burn or curl. It usually takes about 10 minutes to thicken the mixture.

Break the chocolate into small pieces and add it to another hot cream. Leave the cream to cool and take care of the apples.

Peel the apples and cut them into a small cube. Melt the butter in a pan and lay the apples on it. Add sugar (if you use sweet apples, then one tablespoon of sugar is enough, if apples are sour, then sugar will be needed more). We cover the pan with a lid and simmer the apples over medium heat until soft. This can take from 5 to 15 minutes, depending on the variety of apples. Add cinnamon to the stewed apples and let them cool. In the meantime, we’ll start assembling the cake.

We collect our cake, laying pancakes on top of each other and greasing each of them with chocolate custard. The top pancake is also greased with cream.

The finishing touch: put apples on the cake.

We put the cake in the refrigerator for 3-4 hours, and preferably at night.
