When melting white chocolate, it should be noted that the fats and cocoa butter contained in dried milk have different melting points; therefore, it is very important to observe the temperature regime and uniformity of melting.

Pour 3-4 cm of water into a pot with low sides and put on the burner. In a clean and completely dry container with a smaller diameter, place a bar of chocolate broken into small pieces. If necessary, more chocolate can be melted, but try not to melt more than 250 g at the same time.

Bring water to a boil, but do not boil. Reduce the temperature and carefully place the container with chocolate in a pan with water. Make sure that not a drop of moisture gets inside this container, white chocolate is very sensitive to water! Gently stir the mass to evenly distribute the temperature. As soon as all the pieces of chocolate have dissolved, the container with the mass can be removed from the water and used in a few minutes for further preparation of desserts or decorations.

In order for white chocolate to melt well to a homogeneous mass, pay great attention to its choice in the store. It is best if it is high-quality chocolate of well-known brands without the content of vegetable fats.

Many housewives add a little fat cream (at least 20%) when melting it with white chocolate. This mass is suitable for desserts and sweets.
