You will need
- -2 tsp olive oil
- -1 medium onion
- -2 cloves of garlic
- -1 carrots
- -1 celery stalk
- -1/4 tsp dried chili peppers
- -1/2 tsp dried thyme
- -1/4 teaspoon of salt
- -1 tablespoon of tomato paste
- -400 grams of pumpkin
- -2 cup cauliflower
- -5 cups of chicken or vegetable stock
- -3/4 glasses of water
- -2 bay leaves
- -1/4 cup chopped parsley

Heat olive oil in a large saucepan set over medium heat.

Add onion to olive oil and fry until golden brown.

Add garlic, carrots, celery, chili pepper (optional), thyme and salt to the onion. Cook for about 5 minutes until the vegetables are soft.

After, add the tomato paste and mix thoroughly.

Place nuts, cauliflower, vegetable broth, pumpkin, water and bay leaf in a pan. Bring to a boil, then reduce heat and cover. Stew for 15 to 20 minutes, until the zucchini and cauliflower are tender.
