Fried cakes are made from yeast dough - butter or sour, begin with any products - from mashed potatoes and mushrooms to sweet jams and are fried in more vegetable oil or fat. Of course, this is not the most wholesome food, but sometimes it’s nice to treat yourself to something delicious!

You will need

    • 1 kg of flour;
    • 1 cup of milk;
    • 40 g of fresh yeast or 2 sachets of dry;
    • 125 g butter;
    • 2 yolks;
    • 1 egg
    • 3 tbsp. tablespoons of sugar;
    • salt.
    • For filling:
    • 1 kg of potatoes;
    • 0.5 kg of mushrooms;
    • 2 onions;
    • 1 head of cabbage;

    • milk
    • butter for mashed potatoes - to taste;
    • salt.

Prepare a dough for dough: in warm milk (about 37-38˚С) add yeast and sugar. Sift half the flour with salt and pour in the prepared mixture. Stir the resulting mass, cover with a towel and put in a warm place for 1 hour.

When the dough is suitable, add softened butter, yolks and an egg to it - they should be at room temperature. Then add the remaining flour. Carefully place the dough - it should become smooth, not sticking to the hands. Cover the dough with a towel and put in heat for another hour.

When the dough comes up, knead it and leave it for another half an hour or an hour.

While the dough is coming, prepare the filling. Peel the potatoes, cut into large pieces, cook in salted water and mash. You can add an egg, warm milk or butter to it if you wish.

Peel the onion, chop finely and fry in vegetable oil. Mushrooms (it is best to use forest mushrooms, such as butterfish, boletus, etc., but you can also take champignons), peel, cut into small pieces and fry with onions until cooked. Combine mashed potatoes with fried mushrooms, mix thoroughly.

Cut the cabbage into short strips, salt, mix thoroughly and remember a little to make it softer.

Stew the cabbage in vegetable oil along with the remaining onion until tender.

Roll out the dough on a table sprinkled with flour and cut circles from it. In the middle of each lay out the filling - cabbage or mashed potatoes with mushrooms. Pinch the pies.

Fry pies in a large amount of butter until golden brown on each side.

Put the finished cakes on a paper towel to stack excess fat. Serve lightly cooled.

Useful advice

As a filling for pies, you can also use mashed potatoes without mushrooms, or just fried mushrooms, as well as minced meat in pure form or mixed with boiled rice, hard-boiled eggs and chopped with green onions, and so on.
