It is made from buckwheat flour or buckwheat with the addition of wheat - so that the noodles do not fall apart. Soba is a versatile product, it can be eaten both in summer and in winter, cold and hot, as a main dish and side dish, in soup, in salad, in boiled, fried, baked, with and without sauce. In addition, soba has high nutritional properties and contains a large amount of healthy proteins and vitamin B.

You will need

    • 250 g dry event;
    • 4 cm ginger root (fresh);
    • 1 medium carrot;
    • 4 stalks of green onions;
    • 375 ml of dashi broth;
    • 125 ml of soy sauce;
    • 4 tbsp. tablespoons of mirin;
    • 1 pinch of salt;
    • black pepper;
    • pickled ginger;
    • pickled daikon;
    • 1 sheet nori.

Boil water in a large saucepan, throw the noodles in there, when the water boils again, add another 250 ml of cold water, then let the water boil again and cook the noodles for 2-3 minutes, until almost done. Discard the cooked noodles on a sieve or colander and rinse with cold water. Let the water drain.

Peel and chop the ginger and carrots - first into thin slices, then each slice into a thin straw 3.5 mm long.

Chop the spring onion very thinly.

Boil water in a small saucepan and blanch vegetables in it for half a minute. Drain and lay vegetables to cool in a bowl of cold water. When the vegetables have cooled, drain the water again.

Combine dashi, soy sauce, mirin, salt and pepper in a small saucepan, boil and let the sauce cool completely.

Scissors nori cut into thin strips.

Gently mix the cooked and cooled noodles with vegetables and place them in shallow dishes. Put a little pickled ginger and daikon on the edge of each. Garnish the chopped nori noodles on top. Pour the sauce into wide flat bowls. Serve the noodles with the sauce - dipped in it with food. The indicated amount of ingredients is designed for 4 servings.

The most delicious, appetizing and healthy is considered to be soba, made exclusively from buckwheat flour, without the addition of wheat. However, such noodles will be very tender and fragile, therefore it should be cooked with great care.

Useful advice

Dashi, or hondashi, is a Japanese fish stock that is sold dry. Dilute its nodule depending on the desired concentration of the broth, usually about 1 teaspoon per half a glass of water.

Mirin is a Japanese sweet rice wine commonly used for culinary purposes.

Nori - dried pressed seaweed, which, as a rule, wrap maki sushi, or rolls.
