  • - 200 g of cream,

  • - 110 g of sugar,

  • - 60 g butter,

  • - 3 eggs,

  • - 2 tbsp. tablespoons of lemon peel,

  • - 1 tbsp. a spoonful of vanilla sugar.

Put 60 grams of butter in a saucepan, melt over low heat.

While the butter is melting, break three eggs into a bowl, add 110 grams of sugar and 1 tablespoon of vanilla sugar, beat until lush.

When whipping, pour the egg whipped mass in a saucepan to the butter. See that the butter in the stewpan is not hot, otherwise the egg mass will curl.

Beat for 20 seconds, constantly monitor the temperature, which should not exceed 60 degrees. Remove the stewpan from the heat.

Wash lemon, dry, grate zest. Mix the zest with lemon juice and cream.

If the cream turned out to be liquid, then put it on a small fire and boil with constant stirring until the desired density, then remove from heat and cool to room temperature.

Whip the cooled cream with a mixer until a firm foam. Gently mix the cream with lemon cream. Arrange the mousse in portioned bowls and leave in the refrigerator for 3-4 hours. Before serving, decorate the mousse with half rings of lemon or sprigs of mint, serve chilled.
