Pink salmon is one of the types of Far Eastern salmon, it has tender pink meat, without small stones. This fish is very tasty if you cook it in the dough.

    • 750 g fillet of pink salmon;
    • juice of 1 lemon;
    • 1 stalk of leek;
    • salt
    • ground allspice to taste.
    • For the test:
    • 200 g butter;
    • 200 g fat-free cottage cheese;
    • 200 g of flour;
    • 0.5 teaspoon of salt.
    • For lubrication:
    • 1 egg
    • 1 tablespoon of milk.

Chill the dough products well in advance. Sift the flour on a table with a slide and make a depression in the center. Cut the butter into cubes and put into a recess, add salt, low-fat cottage cheese and knead the dough, thoroughly kneading it with your palms. Roll the finished dough into a ball so that the surface does not dry out, wrap in cling film and put in the refrigerator for two hours. If you have little time, you can briefly put the dough in the freezer.

Wash and dry the pink salmon fillet with a napkin. Pour the fish with lemon juice and sprinkle with ground allspice. Wash the leek and divide into separate sheets. Blanch them in a pot of boiling water for three minutes, then immediately rinse with cold running water and let it drain. Leave the leaves of leek a little overlap on a kitchen towel, pat it dry with a napkin and let them dry. Lay the fish on top, sprinkle it with salt and wrap in onion leaves.

Divide the chilled dough into two parts and roll out in the form of rectangles of about 20 by 40 cm in size on a table lightly sprinkled with flour. Cut each layer of dough in the shape of a fish. Put one "fish" from the dough on a baking sheet lined with baking paper. On it lay the pink salmon fillet wrapped in leek. Smear the edges of the dough with egg white, put the second "fish" from the dough on top and squeeze the edges well.

Using kitchen scissors or a knife, make small neat cuts on the dough that imitate fish scales. From the scraps of dough, fashion the eyes and mouth, glue them with egg yolk. Mix the remaining yolk with a tablespoon of milk and grease the surface of the dough. Bake for about 40 minutes in an oven at 200 degrees. Pink salmon in dough is good both in hot and in cold form. A great addition to this dish will be sour cream with horseradish.
