  • - processed cheese - 150 g;

  • - vegetable oil (it is better to take olive) - 2 tbsp. l.;

  • - ground black pepper;

  • - salt.

Rinse the leek under running water and cut off its green leaves. Cut the rest of the white circles into circles. Peel the carrots and potatoes. Grate the carrots on a coarse grater, and cut the potatoes into small cubes. Wash the mushrooms and chop them into small cubes. Remove the husk from the garlic clove and chop with a knife or crush using a press.

Take a frying pan and heat it. Pour in the vegetable (olive) oil and first put the mugs of leeks, fry them for 2-3 minutes, and then add the grated carrots and fry until half cooked for about 5 minutes.

Put chopped mushrooms and chopped garlic in a pan. Mix everything, add black ground pepper to taste and cover. Reduce temperature to medium and simmer for 7-8 minutes.

After that, transfer the contents of the pan to a saucepan or a small saucepan, add potato cubes, pour 1 liter of water, bring to a boil, salt and cook under the lid for 10 minutes.

After the time has passed, put melted cheese in a stewpan and cook for another 5 minutes, stirring constantly, until all the cheese and water become a homogeneous consistency. Pour in the cream and bring to a boil. And then remove the stewpan from the stove and leave to set up under the closed lid for 10-15 minutes.

Creamy soup with mushrooms can be served on the table, spilling portions into deep plates. And you can grind using a submersible blender, turning it into a soup puree.
