Curd cheese cakes, or curd cheese in another way, is a traditional Russian dish that has been cooked for many decades, without losing significant changes in the recipe. They are small cottage cheese pancakes with various fillings (raisins, berries, apples). Cooked cottage cheese pancakes according to this recipe are very tender, airy, aromatic and unusually tasty.

You will need

    • 500 gr. cottage cheese
    • 4-5 Art. l flour
    • 2 eggs,
    • 4 tbsp. l granulated sugar (can be replaced with brown sugar),
    • salt,
    • vegetable oil,
    • vanilla sugar,
    • baking powder,
    • powdered sugar,
    • semolina (or bread crumbs),
    • 50-70 gr. dried cherries or raisins.

Before cooking cheese cakes, you must first rub the cottage cheese through a fine sieve.

Drive 2 eggs into the cottage cheese, add sugar, vanilla sugar and a little salt, mix everything thoroughly.

Add a little baking powder to the resulting mass (a little less than ½ teaspoon) and mix again.

Sift flour twice over the table. Gradually add flour to the curd and knead well. At the end, put dried cherries or raisins and mix thoroughly again. The dough should be a little sticky.

Gently form balls from the prepared dough and squeeze a little to get a small flat cake 1-1.5 cm thick. Roll each cottage cheese in semolina or breadcrumbs.

Fry cheesecakes on both sides in a pre-heated pan with vegetable oil until golden brown.

Put prepared cheesecakes on a paper towel in order to remove excess oil. Sprinkle with powdered sugar on top. Serve hot cottage cheese pancakes for tea, coffee and milk. Separately serve sour cream mixed with sugar.

For the preparation of cheesecakes, you need to choose not very fat, but at the same time quite dry cottage cheese (6-9% fat). It is very important not to overdo it with flour, otherwise cheesecakes will turn out tough and tasteless.

Useful advice

If you add brown instead of regular sugar, it will give the cottage cheese a pleasant caramel flavor. It is better to choose a pan with a non-stick coating so that the cheesecakes do not stick.
