    • For batter:
    • - 1 egg;
    • - 1 glass of water;
    • - 1 cup flour.
    • For Atsui Maki:
    • - 1 sheet of nori;
    • - 150 g of rice;
    • - 50 g of salmon;
    • - 50 g smoked eel;
    • - 50 g of Philadelphia cheese;
    • - 30 g of avocado;
    • - 30 g of cucumber;
    • - flour;
    • - tempura;
    • - vegetable oil for deep fat.
    • For Akai Maki:
    • - 1 sheet of nori;
    • - 120 g of rice;
    • - 100 g of salmon fillet;
    • - 50 g Japanese mayonnaise;
    • - 50 g of tobiko.
    • For the sauce:
    • - 100 g soy sauce;
    • - 50 g rice vinegar;
    • - juice of one lemon;
    • - sugar to taste.

First of all, prepare a batter in which you will fry the rolls. A special way of frying food in such a batter is called tempura. For the test, cool the water to very cold. Break the egg into a glass, add ice water and mix thoroughly. Sift flour into a pan, add an egg with water and quickly knead the dough. It should turn out airy, light.

Follow the general guidelines when frying rolls. Pour vegetable oil into a high-walled pan. It should be so much that it completely covers the roll. Heat the oil, but do not bring it to a boil. Put a little dough into the hot oil. If it boils, then the oil warms up to the desired temperature. Roll the roll in flour, dip in batter and immediately immerse in hot oil. Fry the roll until it becomes golden crispy. Then take it out, brush off excess oil and place on a paper towel.

Fry, for example, Atsui Maki roll. To do this, cut salmon, smoked eel, avocado and cucumber into thin strips. Roll a roll of nori, rice, salmon, eel, Philadelphia cheese, avocado and cucumber. Roll the roll in flour, and then dip in tempura dough. Deep-fry until golden brown. Cut the roll into 8 pieces and serve warm.

Bake rolls - this is another option for a warm snack. To do this, cook the roll in the usual way, cut it and put on top the caviar mixed with Japanese mayonnaise, cheese, and then heat in the oven.

Prepare, for example, a warm Akai Maki roll. Cut salmon into strips. Roll a classic roll of nori, rice and chopped salmon. Cut the resulting roll into 6 pieces. Combine Japanese mayonnaise and flying fish roe (tobiko). Put the mayonnaise mixture on top of each roll. Bake the roll in an oven or roaster until crusty. Serve immediately.

Cook a special sauce for warm rolls. Combine soy sauce, rice vinegar, lemon juice and sugar. Bring the mixture to a boil and then refrigerate. Keep this sauce in the refrigerator for up to two weeks.
