Take the oil out of the refrigerator in advance and let it melt at room temperature. The oil should be soft, reminiscent of soft plasticine in consistency.

Sift flour through a sieve onto a work surface. Cut the butter into small pieces and put it on the flour. Chop the flour and butter with a knife until all the butter is covered in flour.

Stir salt and sugar in cold water until completely dissolved. Pour the resulting solution into flour and butter and quickly knead the dough. Cover the dough with a damp towel and refrigerate for at least 1 hour. If possible, you can leave the dough in the refrigerator overnight.

Remove the cooled dough from the refrigerator. Pour a little flour on the work surface so that the dough does not stick. Roll out the dough with a rolling pin to a thickness of 1 cm, giving it the shape of a rectangle. Fold the dough 2 times and roll it again to its original size. Put the dough in the refrigerator for 10-15 minutes.

Remove the dough from the refrigerator. Again fold the dough 2 times and roll it to its original size. This procedure can be repeated up to 6 times. From the resulting test, you can immediately start baking, or you can leave it in storage in the freezer.

No need to press the rolling pin hard when you roll out the dough, otherwise the dough will become plastic and will not work multilayer.

Frozen dough should thaw by itself at room temperature.

Use sharp knives to cut puff pastry so as not to compress the layers.

Useful advice

In order to roll the dough into an even rectangle, you can use a piece of rectangular foil as a work surface.

If the dough sticks to the working surface, you can grease it with a small amount of vegetable oil.

Before baking products from puff pastry, a baking sheet must be sprinkled with cold water.
