    • 1 egg
    • 2/3 Art. water
    • 0.5 tsp salt.
    • For pizza dough:
    • 2 tsp dry yeast (yeast saf - levure is good)
    • 350-400 g of flour (175-200 g of white wheat flour and durum each)
    • 250 ml of warm water
    • 1 tbsp olive oil
    • 1 pinch of salt.
    • For shortcrust pastry:
    • 3 tbsp. flour
    • 3 eggs
    • 400 g butter or margarine
    • 2/3 Art. Sahara
    • soda on the tip of a knife
    • 1 tsp lemon juice.

Make yeast dough on dough. In order to cook the dough, mix in a large bowl 0.5 tbsp. milk, 0.5 tbsp. flour sifted through a sieve, 0.5 tbsp sugar and yeast. Rub the mixture thoroughly and place in a warm place for an hour. Opara should increase 2 times. The remaining 0.5 tbsp. heat the milk a little over medium heat, add butter and salt. Whisk everything with a whisk and pour into a dough. Take the eggs and separate the yolks from the proteins. Pound the yolks with the remaining sugar, beat the whites until a lush foam is formed. Add everything to the dough. Sift the remaining flour there, mix everything. Put the dough on a table sprinkled with flour and knead, periodically sprinkling flour until the dough stops sticking, 15-20 minutes. Cover the dough with cling film and put in a warm place for 2 hours. The volume of the test should increase 2 times. Before you start working with the test, mind it.

Make a yeast-free dough. It turns out not so magnificent as yeast, but it is prepared easier and lower in calorie content. Grind flour with butter or margarine (preferably in a food processor). Pour in kefir, add salt, baking powder or baking powder and knead elastic soft dough. Roll the dough into a ball and put in the refrigerator for an hour.

Make dough for dumplings or dumplings. To do this, sift the flour on the table with a slide, make a depression in its top. Beat the egg in, pour warm water, add salt and knead the steep dough. Cover the dough with a napkin and let it stand for 40 minutes.

Make pizza dough. In order to prepare a classic dough, you need 2 types of flour - ordinary white wheat and durum. This is called second-grade flour from durum wheat, GOST 16439-70. Mix both types of flour, pour the mixture into a bowl with a slide and make a deepening in the middle. Pour the yeast with warm water from the total mass, approximately 25 ml. Let them come up and pour into the recess.

Pour in the remaining water, add olive oil, add salt. Knead the dough with your hands. Put it on the table, sprinkled with flour, and knead for about five minutes. Then put it back in a bowl, cover with a towel and let stand for 30 minutes. The dough should rise 2 times.

Make one of the main types of dough - sweet shortcake. To do this, soften butter or margarine, grind with eggs and sugar. Pour in flour mixed with slaked lemon juice, soda and salt. Knead the dough and put it in the refrigerator for 1-2 hours.
