  • - 1/2 teaspoon of soda;
  • - 1/2 tsp sugar;
  • - one glass of grated cheese (it is better to take hard cheese);
  • - one glass of grated ham;
  • - two glasses of flour.

First of all, you need to mix kefir in a deep bowl (its fat content does not matter, however it is worth remembering that the fatter it is, the less flour is needed for the dough, these ingredients are indicated for kefir with a fat content of 2.5%), salt, sugar and soda, then add grated cheese and flour to the resulting mixture. Knead elastic dough.

Wrap the resulting lump with cling film and let the dough lie down at room temperature for 10-15 minutes (you should not stand the dough longer, otherwise the cakes will turn out less lush).

After the time has passed, the dough must be divided into parts and rolled from them balls with a diameter of not more than three centimeters, then using a rolling pin to give the balls the shape of thin pancakes (the thickness should not exceed five millimeters).

Next, put a little grated ham (about a teaspoon) on each pancake and smooth it over the entire surface so that the layer is even. Gently fold each pancake in half and pinch their edges.

Pour vegetable oil into a thick-bottomed frying pan and put on high heat. As soon as the oil hiss, you need to put the cakes in the pan and fry them on both sides for one to two minutes.

It is worth remembering that when the lid is closed, the cakes are incredibly lush and soft, and if you cook them without covering the pan with a lid, they turn out to be more flat and crispy. The lid should not be covered, otherwise the cakes will not turn out crispy.

As a filling, you can use not only ham, but also any other products, for example, grated cheese and tomatoes, zucchini, pumpkin, etc.
