Rinse rice, fill with water (water should be twice as much rice) and put on medium heat. After boiling, reduce heat and let simmer for 20 minutes. Remember to stir constantly.

Cut the cucumbers and cheese into thin strips. Boil the shrimp (dip them in boiling water and fold in a colander after 2 minutes).

Mix rice vinegar with sugar and salt. Add 2 tablespoons of hot water and mix until sugar and salt are completely dissolved. Pour the solution into hot rice and mix. Leave the rice to cool slightly.

Lay the nori sheet with the smooth side down on a wooden mat. Lay a layer of cooled rice so that about 2 centimeters of empty space remains on top.

Step back 2-3 centimeters from the bottom and put the filling (cheese, cucumbers, shrimp). Gently roll a round elastic roll with a wooden napkin.

Put the roll on the board and cut it into pieces. Put on a plate and leave to soak for 15-20 minutes. Serve with soy sauce.
