Rice soup with meatballs is a very tasty and nutritious dish that will appeal not only to adults, but also to children. True, its composition may be different. For example, buckwheat or peas are often used instead of rice. And also in the process of making soup with meatballs, you can do without potatoes.

To prepare rice soup with meatballs, prepare the following products: 4-5 potato tubers, 2 small onions, half a glass of rice, 2 carrots, 400 g of meat or prepared minced beef, a bunch of parsley and dill, 200 ml of vegetable or 150 g of butter, and also salt, depending on your taste preferences.

Rinse the vegetables first and chop them. Carrots can be cut into circles, and potatoes into small cubes. Rinse the rice in cold water as well. Put a pot with 2 liters of water on the fire and wait until it boils. Pour potatoes into it and cook for 5-10 minutes over low heat. Then put the carrots in the pan and cook for another 5 minutes. As for rice, it will cook even faster than carrots. Therefore, it is best to place it in the pan later than most. Continue cooking by occasionally stirring the contents of the pan. After adding rice, slide the lid slightly so that the soup does not run away.

Salt with boiling water. Then the potatoes will boil slower.

If you are using a piece of meat, twist it in a meat grinder along with peeled onions. The task is greatly simplified if you bought ready-made stuffing. Only it should not be watery. If you made the stuffing yourself, thoroughly mash it with a fork, and then with your hands. It should stick together well. This ensures that the meatballs in your soup will not fall apart.

Form small balls from forcemeat. You can stick them as much as you want. Dip the meatballs into the soup and lower the heat slightly. Remove the resulting foam and cook until cooked. You need to wait for the meatballs to pop up. Add chopped greens and after 3-4 minutes remove the pan from the stove.

Shortly before cooking, put a little butter or vegetable oil in the soup so that the broth is more rich. If desired, you can cook rice soup with meatballs and egg dressing, but without potatoes. To create such an original dish you will need: 3 chicken eggs, half a glass of rice, 2 onions, 3 carrots, 500 g of ground beef, lemon, 3 tbsp. l olive oil, 1 tbsp. l flour, 1.5 liters of water, as well as salt and spices to taste.

For the preparation of soup, it is better to choose round-grain rice, as it cooks faster.

Peel and chop the onion. Take a sufficiently deep bowl and mix raw rice, minced meat, onion, spices, beaten egg and a few tablespoons of water in it. Form small meatballs.

Fry the remaining chopped onion in olive oil. Grind the carrots and fry it for 10 minutes, and then shift the vegetables in a pot of water and bring to a boil. Salt to taste. Then put the meatballs. After 30 minutes, pour the dressing into the soup. By the way, to prepare the dressing you will need to whip the whites and yolks separately. After this, lemon juice is mixed with yolks and proteins. Also, a small amount of flour should be added to the dressing and mix thoroughly. After adding dressing, the soup can be considered almost ready. Before serving, do not forget to sprinkle it with chopped herbs.
