  • - 215 g of flour;

  • - 75 g of light cane sugar;

  • - 30 g of coconut flakes;

  • - a teaspoon of soda;

  • - half a teaspoon of salt;

  • - 110 g butter;

  • - 3 tablespoons of honey;

  • - a spoonful of vanilla extract;

  • - 1 yolk;

  • - 100-120 g of strawberry jam.

Mix the flour in a bowl with sugar, soda, salt and coconut. Dice the butter and add to the bowl. Quickly knead the oil with your fingers, combining it with dry ingredients, add honey, yolk and vanilla extract, knead shortbread dough.

Wrap the dough in cling film and put in the refrigerator for 30 minutes.

We cover 2 baking sheets with baking paper. We form their dough sausage with a diameter of 3-4 centimeters, cut it into about 22-24 parts. We form balls and put them on baking sheets at a sufficient distance from each other. Press the dough balls with your hand so that they become flat with a small indentation in the center.

We spread a teaspoon of jam in the center of each cookie, connect the opposite edges and gently pinch them. We remove the baking sheets with cookies in the refrigerator for 15 minutes.

Preheat the oven to 180C, bake cookies for 12-15 minutes until a beautiful golden brown color.
