You will need
- - fresh Jerusalem artichoke, carrots and apples in equal proportions (for example, 200-300 grams each);
- - juice from half a lemon;
- - 1 tablespoon of any vegetable oil (for example, olive or sunflower, etc.).

Rinse carrots, Jerusalem artichoke tubers and apples thoroughly with water, wipe with a towel. Then clean fruits must be peeled.

All peeled products should be grated (you can cut them into small strips, so the salad will be even tastier and more beautiful). Shredded Jerusalem artichoke and apples should be immediately sprinkled with lemon juice to avoid their soon darkening.

In a suitable bowl or salad bowl, mix the chopped apples, Jerusalem artichoke and carrots, season with any vegetable oil and mix again. You can add salt, but if you want the salad to be even more dietary and healthy, it is better to do without spices, seasonings and salt.

You can add dill, leaf lettuce, cilantro or any other greens that you like to the Jerusalem artichoke salad. The only condition is that the greens must be fresh, not dried.
