In a small pan with a thick bottom, heat the olive oil and lightly fry the onion, cut into half rings. Scald tomatoes for lean soup with hot water, peel, rub through a sieve and fry with onions. Pour 1 liter of water, drop two potatoes, peeled and cut into small pieces.

Paprika and eggplant cut into small pieces. Dip the vegetables in the soup when the potatoes are almost ready, and simmer all the vegetables over low heat until cooked. If you wish, you can add carrots to this lean soup, replace eggplants with zucchini. You will also get a very tasty lean dish.

At the end, add bay leaf, allspice, finely chopped greens and garlic. You can add one teaspoon of lean mayonnaise.

We take medium-sized vegetables for soup. Try not to boil eggplant.
Useful advice
Fresh eggplant can be replaced with a lecho of eggplant, and if you add cooked rice to the dish, you will get a more satisfying lean dish.
