First of all, you need to talk about one of the components necessary for cooking lean pasta in a navy way. This is okara - a cake left over from the preparation of soy milk.

To get okara you need to soak dry soy in cold water at night. In the morning, drain the water, pour a fresh portion of water at the rate of 1.2 liters of water per 200 grams of dry soy. Wipe soybeans with water with a submersible blender, then strain the mass through gauze and squeeze thoroughly. Get soy milk and okara.

Since it is believed that in raw form soy may contain a certain amount of toxins, the okara must first be steamed or fried. After a short heat treatment, okara can be used.

Cook pasta of any shape according to the instructions on the package. It is preferable to choose pasta from durum wheat or whole grains. For those who cannot tolerate wheat protein - gluten - it is possible to use any pasta: from amaranth, buckwheat, rice or corn flour. Such pasta can easily be found in health food stores or in any supermarket in the department for dietetic and diabetic food.

When the pasta is ready, they need to be washed with cold water and set aside.

The process described below can be performed in parallel with the preparation of pasta or before or after. Pour vegetable oil into a frying pan with high sides and a lid and lightly heat it. Put onion, salt and spices into small cubes. After 1-2 minutes, you can add okara.

Fry, stirring occasionally, until light brown.

Without removing from the heat, add the prepared pasta. For brightness, you can add a couple of tablespoons of sweet corn if desired. Mix well again, cover and simmer over low heat for 5-10 minutes.

During this time, the pasta will warm up, saturated with aromas of spices and the dish can be considered ready.
