Cut the onion in half rings. In a pan with a thick bottom or in a pan, pour olive oil and melt the cream. We spread the onions and simmer on the slowest fire for about 20 minutes under a closed lid.

After languishing, open the lid and add sugar, salt and pepper. Close the lid and leave to languish for another 30 minutes. Sugar will make caramel color onions.

The resulting onion mixture is added to the warm broth. Gradually add flour and mix thoroughly so that there are no lumps. Pour in white wine, cognac and salt to taste. And leave on low heat for another 30 minutes.
