You can buy ready-made dough for Italian pies, but it’s better to do it yourself. To do this, prepare a deep container in which you will knead the dough, a pan is ideal. Mix flour and salt in it, pre-sift the flour with a sieve. In the center, make a recess. Crush the yeast into it. Add one part of warm water and a little more flour there. Stir with a spoon. You got the leaven. Cover the pan with a towel or a lid and place in a warm place for about 15 minutes, then add the remaining water and melted lard. Now you can knead the dough. Stir it thoroughly until it no longer adheres to the bottom of the container. Cover again with a towel and send to a warm place for an hour to make the dough fit properly.

When the dough is ready, divide it into four equal parts. Form a ball from each, then roll into a circle using a rolling pin. Cover with a towel and leave again for an hour. Now is the time to do the filling. Mix ricotta cheese with eggs and add chopped parsley. Grate Parmesan on a medium grater and place in the same container. Cut the pork sausages into small cubes and mozzarella into thin strips. Mix all the ingredients thoroughly and sprinkle generously with freshly ground black pepper. The filling for Italian pies is ready.

Lay the filling on the dough so that it covers only half the tortillas, and cover the other half with the top and tightly clamp the edges. Pour the sunflower oil into a deep pan and deep-fry the cakes until golden brown. Remove the prepared patties with a slotted spoon and dry them on paper napkins to remove excess oil. You can also bake pies in the oven. After 20 minutes they will be ready.
