    • Closed Pie:
    • 200 g puff pastry;
    • 300 g of fish;
    • two or three bunches of dill;
    • Bay leaf;
    • salt and pepper.

Make a dough for an open fish pie. Melt the butter, mix it with flour, add salt and a little water. Knead the dough, it should be thick. Roll the dough into a thin round layer and lay in a greased mold with edges. Put the dough, until without filling, in the oven, preheated to 200 degrees. Bake no more than ten minutes.

Prepare the filling. Boil the fish until half cooked. Finely chop the onion and fry. Cut the fish, mix with onions and chopped fresh dill. Salt, pepper, pour sour cream. Put the resulting mixture into a mold with already baked dough. The filling should not go beyond the edges of the pie. Sprinkle with cheese and bake for 20 minutes. Put the whole dish on the table and cut it right before serving.

An interesting addition to fish pie is figs. In this case, it is best to use not raw fish, but ready-made smoked salmon. Figs are added chopped to the filling along with fish and dill.

Make a closed cake. To do this, take the finished puff pastry, roll it and divide into two parts. Put the first on a greased baking sheet.

Boil the fish until half cooked in salted water with bay leaf. Cut the fish into small pieces with a side of about 5 cm. Spread them evenly over the surface of the dough. If you want to make the cake more nutritious, add rice or potatoes. But in this case, these ingredients will also need to be pre-boiled. Salt and pepper the filling, sprinkle with chopped dill.

Cover the pie with the second part of the dough, pinch the edges. Make a hole in the middle of the top layer so that steam escapes from the cake. Bake in the oven for no more than half an hour. Before serving, cool the cake slightly under the towel.
