Pearl barley meat soup Rinse the pearl barley thoroughly, place in a deep bowl, pour boiling water and leave for a couple of hours. Cook the meat until cooked, then remove it. Add boiled barley to boiling broth. In preheated vegetable oil, fry the chopped onion until golden, and then add the grated carrots. When the vegetables are sufficiently fried, place chopped celery in a pan, cover and simmer for 10 minutes. Cut the potatoes into small cubes and add to the broth when the barley is almost ready. Cut the boiled meat into pieces and add to the soup. Then season it with fried vegetables, salt, pepper, put a bay leaf. When the broth boils, remove it from the heat.

Mushroom soup with pearl barley Bring the water to a boil, then add the thoroughly washed pearl barley to it and simmer for 30-40 minutes. Then drain the water. In heated olive oil, fry the onions and carrots, then add the chopped mushrooms and simmer until cooked. If you use mushrooms, you can immediately fry them. If forest mushrooms, you must first boil them. Season the roast with tomato paste (if it is too thick, it is better to dilute it with a little water beforehand) and simmer for 2-3 minutes. Pour boiled barley with new water or meat broth. When it boils, add the roast, salt, season with spices and then simmer over low heat for another 5 minutes.

Sweet milk soup In boiling water, place the washed barley and cook on low heat for 40 minutes. Heat the milk and, not bringing it to a boil, add boiled pearl barley, salt, add sugar to taste and cook for another 20 minutes, stirring occasionally and making sure that the milk does not stick on the bottom. Better for this to cook soup in a water bath. Put butter in a bowl of soup.
