In the summer, when there are a lot of vegetables and fruits on the market, I want something light, tasty and satisfying. Vegetable stew with chicken breast is a light, aromatic, simple and very tasty dish that is very simple to prepare.

To make the meat stew beautiful and fragrant, you need to peel the onions from the husk, wash and dry it, and then finely chop. Rinse the chicken fillet, and then cut into small pieces. Pour the vegetable oil into the pan, heat it well, put the onion and fillet in it.

Fry the meat with onions until golden brown. Take a large enough pan, transfer the meat with onions into it.

Rinse blue ones, dry and cut into cubes. To avoid stewing, sprinkle eggplant with salt and leave for 10 minutes. While eggplant is letting the juice, you can peel and chop other vegetables.

Rinse all remaining vegetables, and then lay on a paper towel to dry.

Peel the zucchini, cut into cubes and put in a pan to the meat.

At the Bulgarian pepper, remove the seeds and chop finely, put to other vegetables.

Peel and dice the carrots or rub on a coarse grater. Peel the potatoes and cut them into cubes. Put the vegetables in the pan.

Drain the juice from the blue ones, and combine the vegetables themselves with others.

Put the pan on a slow fire, salt and season the stew, mix all the vegetables.
