You will need

    • For a Finnish New Year's salad:
    • 4 potatoes;
    • 4 carrots;
    • 4 small beets;
    • 1 onion;
    • 4 medium pickles;
    • 3 eggs;
    • 400 g pickled herring fillet;
    • salt;
    • pepper.
    • For the sauce:
    • 200 ml of 10% cream;
    • 1.5 tsp vinegar
    • 2 tsp Sahara;
    • beetroot broth.
    • For a salad with crab:
    • 1 tbsp gelatin;
    • 2-3 glasses of fish stock;
    • 200 g canned crabs;
    • 8-10 gherkins;
    • 2 eggs;
    • 1 potato;
    • 1 carrot;
    • salt;
    • pepper;
    • parsley greens;
    • For baskets:
    • 2 cups of wheat flour;
    • 150 g butter;
    • 1 tbsp sour cream;
    • 1 egg
    • 1 tsp Sahara;
    • salt;
    • cooking oil for greasing molds.
    • For Spanish New Year's salad:
    • 12 raw peeled tiger shrimps;
    • 6 tablespoons of olive oil;
    • 3 cloves of garlic;
    • salt;
    • pepper;
    • 2 pods of green bell pepper;
    • 6 tomatoes;
    • 400 g of shell pasta;
    • ½ lemon juice;
    • ground red pepper.

Finnish New Year's Vinaigrette

Wash and peel potatoes, carrots, beets, boil all vegetables separately from each other, cool and cut into small cubes, do not drain the beetroot broth. Cut pickles and onions in the same way, into small cubes, mix all the vegetables, salt and pepper. Cook hard-boiled eggs, cut into large, neat slices.

Whip the cream, gradually add sugar and vinegar, tint with beetroot broth. Serve the sauce and herring separately, put slices of eggs on top of the salad.

Crab jelly

Cool the butter, rub with sugar, mix the egg and sour cream, beat lightly, salt, sift the flour, knead the dough. Knead thoroughly, wrap in cling film, leave in a cool place for 1-2 hours. Lubricate the molds with cooking oil, bake tartlets until cooked.

Cut canned crabs, wash and peel potatoes and carrots, boil in salted water, chop parsley. Hard-boiled eggs, cut into small cubes gherkins, carrots, potatoes, eggs, carefully mix the vegetables and eggs, salt and pepper.

Soak the gelatin in a cold broth, according to the recipe on the gelatine packaging. Heat the remaining broth, introduce soaked gelatin, bring to a boil, cool. Remove the tartlets from the molds, pour 1 centimeter of the broth with gelatin into the same molds, wait until the jelly resembles a soft-boiled egg in consistency.

Put on the jelly crabs, parsley, carrots, potatoes, eggs, gherkins, pour the broth, cool until solid. Put the jelly in the dough baskets. Keep in the refrigerator until serving.

Spanish christmas salad

Wash and dry the shrimp, fry for 3-4 minutes in olive oil, chop the garlic finely, fry the shrimp for another 1 minute, salt, pepper and mix.

Boil water, salt, put pasta in water, cook for 15 minutes less than indicated on the package, fold in a colander, rinse with cold water. Cut tomatoes into large slices, sweet pepper - into strips, mix vegetables with pasta and shrimp, drizzle with lemon juice, salt, add ground red pepper, mix.
