    • 300 g of peeled frozen mussels;
    • 3 large tomatoes;
    • 1 onion;
    • 1 carrot;
    • 1 tbsp flour;
    • 1/2 tsp of thyme;
    • 1/2 tsp oregano;
    • clove of garlic;
    • chili pepper;
    • parsley or basil;
    • lemon juice;
    • olive oil;
    • a pinch of brown sugar;
    • ground pepper;
    • salt

Defrost mussels. It is better to defrost not in a microwave oven, but under a stream of warm water. Be sure to remove all the protruding fibers and roots of the mussels, you do not need to gut them. Rinse the seafood well again and place in a colander so that the glass is full of water.

Peel the onion and chop finely. Wash the carrots, peel, cut into small pieces or grate on a coarse grater. Heat olive oil in a pan, salt and fry the onions. When the onion is soft, add carrots to it. Stir slightly, fry the onion-carrot mixture for several minutes. Chop the garlic finely and add it to the prepared fried vegetables.

While vegetables are fried, prepare a base for tomato sauce. Peel from tomatoes is better to remove. To do this, wash them and scald with boiling water. After that, the peel can be easily removed. Grind the pulp of tomatoes in a blender or on a grater. You can also rub it through a sieve. Mix the resulting mass with flour, add thyme, oregano and pepper. Mix well again and add to the fried onion - carrot mixture. Thinly chop the pod of chili and add to the sauce. While stirring, bring the tomato sauce to a boil and remove from heat.

Heat a little oil in a separate frying pan and transfer there from the mussel colander. Heat them over medium heat until juice appears. The resulting juice can ruin the dish, so be sure to drain it. Add a little oil to the pan, salt, add a pinch of brown sugar and mix. Fry the mussels until golden. When the mussels are ready, pour them with tomato sauce, mix and cook over low heat for another 10 minutes, so that the sauce is saturated with the aroma of mussels. Add a little lemon juice to the finished dish. Before serving, sprinkle with chopped herbs or garnish with a slice of lemon.
