You will need

  • - 1 kg drain,

  • - 320 ml of water (250 ml for cooking plums and 70 ml for agar-agar),

  • - 470 g of sugar (400 g for marmalade and 70 g for deboning),

  • - 2.5 g of citric acid,

  • - 10 g of agar-agar.

Rinse, dry and seed plums. Put the plums in a pan, pour 250 ml of water, put on a small fire, cook for about 30 minutes until completely softened.

Wipe soft plums through a sieve (you can use a blender if desired) until smooth. Transfer the resulting mashed potatoes back to the pan, add 400 grams of sugar and 2.5 grams of citric acid, mix well, cook on low heat for another half hour.

In a small cup put agar-agar, which is filled with water (it is desirable that the water was at room temperature) and leave for 15 minutes.

Add agar-agar to the pan to the plum puree, mix and cook for another three minutes.

Cover the form with a sheet of parchment, onto which carefully pour the plum mass. Leave to cool at room temperature. After the plum mass has completely cooled, put it in the refrigerator for two hours.

Then remove the marmalade from the refrigerator, cut into small cubes or strips, roll in sugar and treat the kids.
