Chicken soup is a traditional first dish of Russian cuisine, familiar and loved from childhood. To surprise the family with an unusual version of this nutritious dish, you can cook a delicious chicken soup with cheese.

Pour 2.5-3 liters of cold water into the pan. Rinse the chicken breast, separate the skin and bones and put the breast in water, after boiling, remove the foam. Peel the carrots, onions and parsley root, put in the broth: carrots and parsley in its entirety, onions, if large, need to be cut into several pieces. Simmer for 20 minutes over low heat, then add salt, add 1-2 washed bay leaves and cook for another 5 minutes.

Then remove all the ingredients from the broth. Chop the chicken into small pieces, thinly chop the carrots and parsley root into small pieces. Throw the onion and bay leaf.

Add semolina to an empty broth and cook for 5 minutes over low heat, stirring continuously.

Grate the cheese on a fine grater and divide into two parts. In a bowl, stir the eggs, a portion of the grated cheese, and a quarter glass of water. Pour the egg and cheese mass into the chicken broth very slowly, stir and boil for 4 minutes.

Then put the chopped ingredients in the pan: chicken, parsley root and carrots, cook for 5 minutes. Pepper the finished soup in plates, sprinkle with the remaining cheese and chopped leaf parsley.

Useful advice

It is good to serve chicken soup with cheese to the table with croutons fried in sunflower oil.
