Apples are placed in a pan, poured with cold water, and the pan is placed on medium heat. If the compote is cooked from green apples, then it will taste like that with a little sourness. And when making compote from red apples, which are sweet in themselves, it is advisable to add a little citric acid to it. For better extraction of aromatic and flavoring substances from apples into compote, it is necessary to add a part of sugar at the beginning of cooking.

The compote is brought to a boil, the remaining sugar is added, everything is mixed, and the compote is cooked for several minutes. Cooking time depends on the stiffness of the apples. If they are very ripe and soft, it is enough to cook for 2-3 minutes. Green and unripe apples boil for longer, you should be guided by their appearance.

No need to boil the compote for a long time - all the vitamins contained in them will disappear from the apples. Then the pan is removed from the fire, after which it must be closed with a lid, and let the compote brew for about 20 minutes. Then you should put the compote in the refrigerator, otherwise it will sour faster in the fresh air.

In the second version of cooking apple compote, first the water in the pan is brought to a boil, and only then cut apples and sugar are poured into it. The compote is again brought to a boil, removed from the heat and left to infuse under a closed lid.

Prepared apple compote should be drunk chilled, so it better quenches thirst. And some nutritionists recommend replacing the tea with compote in the summer.
