    • 4 eggs
    • 1 glass of beer
    • 1.5 cups flour

Clean squid carcasses from the film covering them, remove the inner ridge, cut off the tentacles, thoroughly rinse the resulting tubes, dry them with a towel, cut into rings. Fold the resulting rings on a napkin so that the last remaining moisture drains from them.

Separate the yolks from the proteins, put the proteins in the refrigerator to cool them a little. In a separate bowl, mix the yolks with beer, flour and salt into a thick dough. Instead of beer, you can take any other liquid - milk, water and even brine.

Stir the dough until it turns into a homogeneous mass.

Remove the squirrels from the refrigerator, whisk with a mixer at high speeds until a stable foam. Using gentle movements, mix the protein foam into the existing dough.

Take the squid rings one at a time, dip them in batter and dip in boiling oil for 1-2 minutes. It is enough to wait until the batter grabs around the squid, and you can immediately remove it from the oil. Dry the finished rings on a napkin to remove excess fat from them.

Useful advice

If you still have an extra batter, fry onion rings in it. They will be a great addition to squid.
