Cooking cabbage soup is a whole art! The main thing that you should clearly remember for yourself is the main components without which cabbage soup will not be cabbage soup - meat and cabbage, which complement roots (carrots), vegetables (potatoes), spices (onions, peppers, bay leaves) and sour dressing (sour cream, cabbage pickle).

Different types of cabbage soup are prepared using the same technology - meat is boiled (or its substitutes - mushrooms, fish), then sauerkraut is added to the meat broth (or its substitutes - brine, sorrel, green sour apples, salted mushrooms or sour cream). After cabbage is cooked in the broth, salt and spicy dressing, potatoes are added to the soup. Ready-made cabbage soup is served to the table with sour cream.

Recipe 1. Sour cabbage soup.

You will need:

500 gr beef

600 gr potatoes

300 gr sauerkraut

200 gr carrots

200 gr onions

salt, pepper, bay leaf.

Thaw the meat, rinse and simmer for about 1.5 hours. Remove the meat from the broth, cut it into small cubes and fold it back into the broth. Grate carrots and chop onions. Fry onions with carrots in a pan with the addition of vegetable oil. Cut potatoes into cubes or strips.

In a boiling broth put sauerkraut. If the cabbage is too acidic, it is recommended to rinse it first with cold water. After 10 minutes, run the potatoes into the broth. Cook another 7-10 minutes. Add the onion and carrot roasting to the soup, add salt and pepper to taste. You can put parsley root in cabbage soup for a complete taste. Cook for a couple of minutes, then remove the pan from the heat. Serve cabbage soup to the table with sour cream. Bon Appetit!

Recipe 2. Sour cabbage soup with mushrooms.

You will need:

250 gr sauerkraut

300 gr pork

4 potatoes

1 onion

1 carrot

150 gr mushrooms

salt pepper

Boil pork until cooked and cut into cubes, run back into the broth. Boil the mushrooms separately until half cooked, drain the mushroom broth. Fry onions and grated carrots in vegetable oil. In the boiling meat broth, put the washed sauerkraut, cook for 10 minutes. Then add mushrooms and potatoes. Cook for another 10 minutes. Season cabbage with fried vegetables, add salt and pepper to taste. After a couple of minutes, remove the pan from the heat. Season the prepared cabbage soup with sour cream and herbs before serving.
