Potato pies stuffed with meat - a great option for those who want to diversify and complement the taste of fried potatoes. Try to make them according to a very old recipe, according to which mothers and grandmothers prepared. Each new generation brings its own zest to it.

You will need

  • - 500 g of meat;

  • - 10 medium potatoes;

  • - 2 raw yolks;

  • - 3-4 tbsp. l flour for dough and 1-2 tbsp. l - for deboning;

  • - 2 onion heads (one for minced meat and broth);

  • - 4-6 cloves of garlic (for minced meat, broth or potatoes);

  • - cooking oil;

  • - salt, pepper, spices to taste;

  • - sour cream or sauces as desired.

Boil the meat by adding onion, garlic, pepper, spices and salt to the broth to taste.

Wash and boil the potatoes in their skins, let cool to a warm state. At the beginning of cooking, you can add a couple of bay leaves and one or two cloves of garlic. This will give the potato a special flavor. Other spices are also added, for example, dried dill (not necessarily chopped, whole stems and seeds are also suitable), caraway, parsley, ginger, turmeric and cinnamon. You can use fresh herbs, dress them with a thread, put in a pot of potatoes, and at the end of cooking - remove and discard.

Sauté the onion and garlic.

Crank meat through a meat grinder.

Combine the resulting minced meat with fried onions and garlic, lightly fry everything together, salt, pepper, add spices and garlic as desired and taste. You can add a little broth in which the meat was cooked if the minced meat turned out to be dry.

Peel potatoes, turn through a meat grinder.

Add the yolks, flour, salt and pepper to taste, mix.

Pour on the table 1-2 tbsp. tablespoons of flour for deboning. Add flour as necessary so that the dough does not stick to your hands. Hands can also be greased with vegetable oil.

Take 1 tbsp. spoon of potato dough, roll in flour on the table, roll the ball first, and then, pressing on it, get a “pancake”, put the minced meat on top and pinch the edges. The pie is ready.

Similarly, form the remaining pies.

Fry the resulting pies in a frying pan in oil until golden brown on all sides.

Put the prepared pies on a napkin to absorb excess fat. Serve with sour cream or sauce to taste. You can even eat cold.

To speed up the cooking process, you could use prepared meat. But in this case there is no guarantee that pieces of bones and veins will not fall into it, that fresh minced meat will not mix with stale. Better not take the risk.

Useful advice

The resulting broth from cooking meat can serve as the basis for soup or a pleasant addition to pies. And if you are tired and have no strength whatsoever, then the broth can be frozen.

Instead of meat, you can use other fillings. It can be: chicken, turkey, rabbit, fish, vegetables. Do not be afraid to experiment!
