"Brigadeiro" (or Brigadeiros) is an extremely popular delicacy in Brazil, without which not a single children's birthday can do, and on other family holidays these extremely delicious homemade sweets are very popular. The dessert got its name in honor of Eduardo Gomes, a Brazilian military leader who at one time had the rank of brigade general (brigadeiro), and then served as air marshal. Cooking Brigadeiro at home is very simple, one might say elementary, but you will need quality ingredients.

You will need

  • - 380 g of quality condensed milk

  • - 1 tbsp. a spoonful of butter (softened)

  • - 3-4 tbsp. tablespoons of cocoa powder

  • - chocolate or colorful pastry topping

Take dishes with a sufficiently thick bottom, to the surface of which the food does not burn. Combine the condensed milk, butter and cocoa powder in it. Place the container on a low heat stove.

Bring the mass to a boil without ceasing to stir with a silicone spatula. Then reduce the heat to a minimum and keep the dishes with the sweet mixture on the stove for another 10 minutes. Do not forget to constantly stir the contents of the dishes. As a result, a sufficiently thick and smooth mass, evenly colored cocoa, should form.

Remove the saucepan from the heat and let it cool. Then place in the refrigerator for 40 minutes, maybe for an hour. Remove the cooled mass from the refrigerator.

Melt some butter and grease your hands. Now separate the small pieces from the mass and roll the balls about the size of a walnut or a little larger. With oily hands, doing this is very convenient. To make the balls more even, you can roll them on the surface of a glass cutting board.

Roll the resulting sweets in a confectionery sprinkle (crushed nuts or coconut flakes can be used to decorate sweets). Place on a flat dish and put in the refrigerator, keep sweets there until serving.

When making sweets, pay attention to whether you can see the bottom of the pot when stirring the mass. If so, then the chocolate base for Brigadeiro is ready.

Useful advice

Large Brigadeiro can be placed in paper capsules for making muffins, and serve in them. Instead of cocoa powder in the recipe you can use finely grated bitter chocolate of good quality (high in cocoa).
