  • - gelatin (4 leaves) - 10 grams;

  • - cream - 200 milliliters;

  • - instant coffee 5 tablespoons;

  • - cottage cheese - 500 grams;

  • - vanilla sugar - 3 packs.
  • - Optional:

  • - stewed cherries - 1/2 liter;

  • - cherry juice - 1/4 liter;

  • - starch - 20 grams;

  • - sugar - 2 tbsp. spoons;

  • - cinnamon - 1-2 tbsp. spoons;

  • - lemon - 1 piece.

Beat the yolks well with the mixer along with sugar, milk and vanilla sand. Heat butter, add to whipped egg yolks. Mix flour with cocoa, starch and baking powder. Beat the whites, add to the yolks, alternating with the dry ingredients prepared previously.

Lubricate the base and sprinkle with breadcrumbs. Pour the finished dough into the base, smoothly level. Preheat the oven 190 degrees. Bake 25 minutes.

Decant the cherries. From the compote, choose the bones. Cook starch (20 grams) with juice, grated zest and cinnamon. When it begins to thicken, pour lemon juice, add cherries if desired, sugar. Put the mixture in a cold place.

Cut the cooled biscuit into two parts. Sprinkle with liquor or cognac. Put half cherries on the bottom of the cake. Cover with the second part of the biscuit, spread the cherries on top. Whip cream with sugar, coffee and vanilla. Dissolve gelatin in water. Then add 5 tbsp. spoons of pureed cottage cheese. Lubricate the cake and the sides with thickened cottage cheese. Refrigerate for 2 hours. Sprinkle with cocoa before decorating and decorate with cherries.
