Blanmange is a cold dessert, essentially a milky sweet jelly. The dessert is based on milk, sugar and gelatin. Traditionally, cow or almond milk is used. Thus, in order to prepare a blanmange for a vegan or lean table, it is enough to change only one ingredient - gelatin.

  • - water - 750 - 800 ml;

  • - sugar - 3/4 cup or to taste;

  • - agar-agar - 3 tsp

Blanmange for a vegan or lean table is based on almond milk.

To make such milk at home is not at all difficult. First of all, it is necessary to chop peeled almonds. There is no need to clean the kernels

from brown peel.

Grind almonds with a coffee grinder. Place the almond powder obtained in this way in a saucepan, pour hot water and bring to a boil.

Then, to improve the result, wipe this hot mixture with a hand blender.

Next, put a tissue napkin in a colander and pour the hot mashed almond mixture. Pour the mass in small portions to facilitate labor.

Strain by squeezing the cake. Keep in mind that gauze is not suitable for this.

Now pour the prepared almond milk into a clean saucepan, rinsing it first with ice water. This is done so that during the preparation of the blanmange, milk does not burn.

Add granulated sugar to the milk. An approximate amount is approximately three quarters of a glass of 250 ml, but you can put more or less, depending on personal taste preferences.

Agar agar is added immediately. But before adding this component, carefully read the instructions on the package. The fact is that agar-agar is produced in two types:

- in the form of a powder;

- in the form of flakes.

In this case, the method of preparing the product for use is different. So, the manufacturer, as a rule, recommends pre-soaking agar-agar in cereal, while powdered agar is not required. There is also a difference in the amount of agar agar, depending on whether you use cereal or powder.

The recipe contains data for agar-agar powder purchased at an ordinary supermarket.

So, in almond milk, add granulated sugar and agar-agar, put the saucepan on medium heat and bring the mixture to a boil.

After that, reduce the heat to a minimum and boil, with constant stirring, for the next 5 minutes.

Blanmange molds are recommended to be prepared in advance. It is best to use silicone muffin molds. Rinse them with cold water.

Jelly, prepared on the basis of agar-agar, hardens quickly and at room temperature, therefore, removing the almond mixture from the fire, immediately pour it into the molds.

Cool and refrigerate to cool the dessert.

As a rule, blanmange is ready for use after 30-60 minutes.

Useful advice

Almond cake remaining in the production of almond milk, do not discard. It can be added to cookie dough.
