Banush (or banosh) is a delicious dish of Transcarpathian cuisine, which is prepared from corn grits or flour. It is traditionally served with fried mushrooms, greaves, sour cream, etc. Modern chefs have turned this folk dish into a real culinary masterpiece. We offer you to cook a wonderful banush yourself.

You will need

  • Sour cream - 500 g (15% fat content);

  • Cornmeal - 1 tbsp.;

  • Brynza or feta - 100 g;

  • Onion - 1 pc.;

  • Smoked bacon (or brisket) - 200 g;

  • Salt, ground pepper - to taste.

Pour sour cream into the stew-pan and let it boil. If the sour cream is too thick, you can slightly dilute with water. Salt, pepper.

We pour corn flour into a boiling mass with a thin stream. Cook the banosh over low heat for 5-7 minutes, constantly stirring with a wooden spatula so that the porridge does not burn.

We cut fat into small cubes. Peel and chop the onion.

In a well-heated pan, fry the fat until golden brown and add the onion. Fry all together until cooked.

Grated feta cheese or feta.

Banosh can be served separately: porridge, greaves, grated cheese. And you can do it another way: lay out everything in layers.
