    • tomato paste - 4 tbsp;
    • hard cheese - 200 g;
    • minced meat - 350g;
    • salt to taste;
    • garlic - 2 cloves;
    • sunflower oil for frying.
    • For the third recipe:
    • eggplant - 2 pcs;
    • tomatoes - 3 pcs;
    • cheese - 150 g;
    • garlic - 1 clove;
    • mayonnaise - 1 tbsp;
    • sunflower oil - for frying;
    • parsley - 2 branches.

Recipe 1. "Eggplant rolls with cheese and garlic."

Slice the eggplant lengthwise into slices.

Put in salted water for 45-60 minutes.

For filling:

Rub the cheese on a fine grater.

Squeeze the garlic into the cheese.

Finely chop the greens.

Combine all ingredients, add some salt and season with mayonnaise.

Mix well.

Fry the eggplant in sunflower oil until golden brown.

On each eggplant, lay a filling on one edge and twist the roll.

Put lettuce on the dish.

Stack the rolls on top and sprinkle with greens.

With the filling you can improvise.

Recipe 2. "Eggplant boats."

Divide the eggplant lengthwise into two halves.

Put in salted water for 45-60 minutes.

Cut the onion into half rings.

Sauté the onion and minced meat in vegetable oil.

When the mince is ready, squeeze the garlic into it.

Wash eggplant, dry on a napkin.

Sauté from the slice side until golden brown.

Carefully remove the flesh without damaging the skin.

Mix the pulp with the meat mass, add the tomato paste and mix well.

Stuff the eggplant "boats" with the resulting mixture.

Sprinkle with grated cheese on top.

Place in an oven preheated to 200 degrees.

Bake for 10-15 minutes until golden brown.

Sprinkle the cooked eggplant with greens. Instead of minced meat, you can use mushrooms or finely chopped meat.

Cut the eggplant into rings.

Put them in saline for 30-40 minutes.

Rub the cheese on a grater. Add grated garlic to it. Season with mayonnaise and mix well.

Fry in sunflower oil until tender.
