You will need

  • - pepper - to taste;

  • - salt - to taste;

  • - parsley;

  • - dill;

  • - sour cream - 1 glass;

  • - vegetable oil - 2 tbsp.;

  • - wheat flour - 1 tablespoon;

  • - eggplant - 2 pcs.

Peel the eggplant out of excess, then wash it in running water. Cut into slices and place for five minutes in hot water. After the allotted time, discard the eggplant in a colander and let the water drain.

Next, salt the eggplant slices, pepper and breading in wheat flour. Roll carefully, from all sides.

Heat a frying pan with vegetable oil and fry the parts of eggplant baked in flour until a golden color appears.

Preheat the oven to 200oC. Put the fried eggplants in a mold and fill with sour cream. Place the pan in the oven and bake until cooked for 40 minutes.

Chop the greens finely with a sharp knife, cool the dish slightly, taking it out of the oven. Sprinkle with herbs and serve on the table as an independent dish or in combination with some light vegetable salad.
