Mix the mixture well, add a glass of polenta and a half cup of pancake flour, half a teaspoon of soda or baking powder, a quarter of a teaspoon of salt. Knead the dough until completely homogeneous, then put in a greased cupcake mold and bake in the oven at 180 degrees for 35 minutes. Note that the shape should be deep, a few centimeters of its sides should remain above the surface of the cake.

While the cake is baking, prepare syrup to soak it. Take the juice from two large oranges - you get about two glasses, the juice of one lemon and one hundred grams of sugar (four full tablespoons or a little less than half a glass). Bring the mixture, stirring, to a gentle boil and remove from the stove.

The readiness of the cake is determined in the traditional way - you need to pierce it with a toothpick. If she stays clean, the cupcake is ready. As a rule, this is necessary only at the first preparation, later you will already bake a cupcake using the familiar technology, knowing the temperature and time of baking, so you do not have to control its readiness.

Remove the cupcake from the oven and leave it in shape. With a toothpick, densely chop it on top almost to the entire depth, at this stage you will also be able to assess the quality of the baking. Then pour the cupcake with syrup and leave to soak. Once it has cooled, remove the cupcake of their shape and garnish with icing from beaten egg white, lemon juice and sugar. Additionally, you can sprinkle it on top with grated orange zest.

You can change the basic recipe as you wish. For example, decorate the cake with chocolate icing, for this, melt in a water bath 200 grams of chocolate with 100 grams of butter, add a tablespoon of cocoa powder. Decorate a cake that has already cooled with icing. You can sprinkle a cupcake with ground nuts, add raisins to the dough, etc. etc. You can do without polenta, using only pancake flour.
