Tilapia differs from other fish in its delicate white meat and low fat content, which makes it ideal for dietary nutrition. Tilapia meat does not require long-term heat treatment, so almost all fish recipes are suitable for its preparation. It is perfect for baking in foil and pots, fish cakes or traditional fried breading and batter.

You will need

    • 500 g of tilapia fillet;
    • salt;
    • pepper;
    • lemon;
    • spices to taste;
    • vegetable oil;
    • dill.
    • For batter:
    • 100-150 g of flour;
    • 0.5 cups of milk or water;
    • 2 egg yolks or 1 egg;
    • a tablespoon of melted butter;
    • salt.

Thaw the tilapia fillet well so that a large amount of liquid is not released during cooking. Then rinse quickly in cold water and cut into small pieces, 1-1.5 centimeters thick and 5-6 centimeters long. Sprinkle the resulting fish sticks with vegetable oil, lemon juice or a weak solution of citric acid.

Make a batter. Pour the flour into a bowl and add lukewarm liquid (milk or water). Melt the butter and pour into the batter too. Add the egg or egg yolks. Salt the batter to taste and put in a cold place for thirty minutes. Beat egg whites separately and add to the batter just before frying the fish.

Wash the dill, dry and chop finely. Sprinkle tilapia with spices and chopped dill, which, if desired, can be replaced with red pepper. Then let the fish prepared for the batter soak in spices for twenty minutes.

Salt the fish pieces. Pour a little flour into a plate and roll on each side each piece of tilapia. This is done so that the batter does not drain from the fish.

Pour a large amount of vegetable oil into a deep pan or special pan; it needs so much that it covers the whole tilapia pieces when cooking. Heat oil well over high heat.

Get out the batter. Add beaten egg white to it and mix well. Using two forks, dip the pieces of fish in the batter and quickly immerse in a pan or pan with hot vegetable oil for frying.

After one or two minutes, when the batter covering the fish is browned, remove the tilapia pieces from the oil with a slotted spoon and dry them on a sieve. Do not forget to place a plate under it, where excess oil will drain.

Serve hot tilapia with fresh vegetable salads. It goes well with a side dish of mashed potato fried in batter.

Useful advice

It is better to buy dry frozen tilapia fillets. Make sure that the box with the fish has the inscription: "Royal perch."
